CRISP PERSIMMON PIE
Peel and slice about 9 cups of fuyu or use 6 cups of fuyu and 2 cups firm apple. Blend in 1 tablespoon lemon juice or more to taste.
Combine ¾ to 1 cup sugar, 2-1/2 tablespoons cornstarch, 1 teaspoon cinnamon and ¼ tsp. ginger. Blend into persimmon slices. Prepare double pit crust. Pour fuyu slices into prepared unbaked pastry and dot with 2 tablespoons butter. Moisten edges and top with top crust or make lattice top. Bake in 400 degree oven 50 to 60 minutes on a cookie sheet set on the bottom rack of the oven. To prevent over browning wrap edge of the pie with foil strip 2 to 3 inches wide. Remove foil strip 15 to 20 minutes before done.
