FUYU SORBET

 

˝ cup sugar

˝ cup water

Boil about 5 min.  Cool

 

In blender or processor puree 2 med. Soft fuyus or enough to make 1 cup pulp. (2 cups for less sweet sorbet.)  Add 1-1/2 tablespoons lemon juice and sugar syrup.

Put in 9” square pan and freeze until almost firm—about l hour.  Break into pieces and process briefly in processor until smooth and slushy or use electric mixer and chilled bowl.

Put in airtight container and return to freezer; let soften slightly to serve.   Makes 1-1/2 cups.  May be frozen in self refrigerated ice cream maker following manufacturer instructions.
