Persimmon Marmalade

· 1 quart peeled persimmons

· 1 c water

· Juice of 1 lemon

· Sugar

Combine persimmons and water.  Boil to a thick pulp, add juice of lemon and cup of sugar to each quart of pulp.  Boil 10 minutes longer.  Pour into sterilized jars and seal.
