PERSIMMON PUDDING #1

2 c. persimmon pulp

1/2 tsp. vanilla

1/2 tsp. soda

2 c. flour

2 eggs

2 tsp. baking powder

2 c. sugar

2 c. milk

1/2 tsp. salt

4 Tbsp. butter

1/2 tsp. cinnamon

 

        Melt butter in a 9 x 13-inch pan in a 325 degree oven.
        Meanwhile, in a large bowl, mix persimmon pulp and baking soda.  Beat in eggs, salt, cinnamon and vanilla.  Sift in flour and baking powder.  Beat well.  Add mild and melted butter while mixing.  Pour in the pan with the melted butter.  Bake at 325 degrees for 55 minutes or until done.
