PERSIMMON PUDDING #2

1 c. sugar

1/2 c. cream

1 egg

1/2 c. buttermilk

2/3 c. flour

1/2 tsp. baking soda

1 c. persimmon pulp

1 tsp. lemon juice

1/2 tsp. cinnamon

1 tsp. vanilla

1/2 tsp. nutmeg

6 Tbsp. butter, melted in pan

        Melt butter in an 8-inch square pan; set aside.  Combine all other ingredients; mix to blend well.  Pour melted butter in persimmon mixture.  Mix to combine.  Pour mixture into pan.  Bake at 350 degrees for 40 to 45 minutes.
        Note: Doubled recipe will make a 9 x 13-inch pan of pudding.
