SUGAR-FREE PERSIMMON PUDDING

1 c. plus 2 Tbsp. persimmon pulp |
1/2 tsp. cinnamon |

1 egg |
1 1/2 c. milk |

1 c. flour |
2 Tbsp. liquid sweetener |

1 tsp. baking powder |
2 Tbsp. butter, melted in baking pan |
|
1/4 tsp. baking soda |
Combine all ingredients and mix well. Pour into an 8-inch square pan. Bake at 325 degrees for 55 minutes.
