MRS. WILKINS’ PERSIMMON CAKE
1˝ C. shortening 2 C. chopped nuts
2˝ C. sugar 2 C. raisins
3 eggs 2 T. allspice
2 C. persimmon pulp 2 T. cinnamon
2˝ C. sifted flour 2 T. soda
Cream shortening and sugar. Add eggs & beat.
Add pulp. Fold in flour with soda and spices.
Add nuts & raisins. Bake in greased loaf pans
@325 degrees about 1˝ hours or until done.
Makes 3 loaves.
